Here is a valid alternative to the classic rice pancakes which in Siena, during the Carnival period, represent the dessert par excellence.

 3 peeled and chopped apples
 2 eggs
 300 g flour
 little bit of cinnamon
 little bit of salt
 1 cake yeast pack
 1 orange (juice and grated skin)
 3 spoons of sugar
 8 spoons of milk
 sunflower oil for frying
 icing sugar to sprinkle the pancakes

Put the apples with the orange juice and the grated orange zest in a bowl, add the cinnamon, a pinch may be enough but if you particularly like it you can put more.
With a mixer beat the eggs with the sugar, when they are beautiful frothy add 3 tablespoons of oil and milk and mix well with a kitchen ladle also starting to combine the mixture with the flour, then the yeast and a pinch of salt. Finally add the apples and mix with a fork.
Use ice-cream spoon, if you have it at home or otherwise a spoon, to get some dough to fry in boiling oil.
Leave the pancakes to dry in paper towels and sprinkle with icing sugar before serving.
