 2 sheet of puff pastry
 Saffron honey (or regular honey mixed with a pinch of saffron)

Remove the core from the apples, cut them into quarters, and slice them very thinly. Place the slices in a bowl of water to soften and to prevent them from turning brown. Let them soak for at least 10 minutes.

 

Meanwhile, unroll the puff pastry and cut it into strips about 5 cm (2 inches) wide. Brush each strip with saffron honey.

Drain the apple slices and arrange them in a line along each pastry strip, slightly overlapping them and leaving a bit of space at the bottom edge. Fold the bottom edge of the pastry up over the apples, then roll the strip up to form a rose shape.

Put a small spoonful of saffron honey at the bottom of each muffin cup or baking mold. Place the apple roses upside down, with the apples facing downwards, so they caramelize during baking.

 

Bake in a preheated oven at 180°C (350°F) for about 45 minutes, until golden and caramelized.
